Brunkow Cheese, a Wisconsin cheese company since 1899, is located in the rolling hills of the Driftless region of Southwest Wisconsin. The operation sources cow's milk from 18 neighboring dairy farms, mostly Amish, and hand crafts specialty and artisan cheeses in small batches. Brunkow makes a few dozen varieties of specialty cheeses. Expect to see raw milk cheddars and spreads, cheddars aged from 3 to 10 years, and Brun-uusto, a Finnish-style baked cheese that is heated over a flame until crisp and buttery. Joe Burns (pictured) makes the artisanal line of cheeses – Avondale Truckle, Little Darling, and Argylshire – under the label Fayette Creamery at Brunkow. All are made by hand and cellar-aged underground on wooden boards.
